Since there were never pilgrims sailing to settle in Ireland (and even if there had been, there was no corn or pumpkins) there’s no thanksgiving holiday here. It’s still a bit strange to see everyone going about their normal business on a day you’re used to celebrating. I can’t say we took the day off, but we did have some great food this evening and we’ll have the full feast on Sunday with our team. Jessica made sure she got pumpkins to process for the pie during Halloween, because that’s the only time they are sold here. But we have them in the freezer, and we have a turkey, and most of all – we have tons to be thankful for!
